Indian Bruschetta

Indian Bruschetta
Cooking time: 20 min | serves: 2

Ingredients:
French bread -------------1
Fig paste ------------------3 tablespoon
Olive oil-------------------1 tablespoon
Onion----------------------1 medium
Cherry Tomato-----------1 medium
Green capsicum----------1 medium
Boiled Corn---------------1 cup
Salt to taste
Pepper powder ----------1/2 teaspoon
Lemon juice--------------1 teaspoon
Fresh coriander leaves to garnish


Method of Preparation:
·         Grill the slices of French bread in a non-stick grill pan.
·         Sauté the chopped onions with olive oil. Once golden brown, add a little bit of water and the chopped green capsicum and cook in a low flame.
·         Add the boiled corn and tomatoes and cook in a low flame.
·         Transfer the mix on to the grill pan.
·         Add lemon juice, pepper and salt to taste
·         Add the fig paste to the mixture and cook till mixture turns thick.
·         Place the grilled corn and vegetables on the bread
·         Garnish with coriander leaves and serve.
